500 grams beef fillets
200 grams fresh green beans
Salt as per taste
Freshly ground black pepper
For The Marinade
Extra virgin olive oil
1 onion, finely chopped
Fresh herbs like parsley, celery, chives, finely chopped
1 teaspoon Dijon mustard
1 tablespoons white wine vinegar
Boil water in a large pan and add a pinch of salt, throw in the beans and cook for 5 minutes, drain the water and leave the beans to cool.
For The Marinade
Mix together all the ingredients in a bowl add some seasoning and toss in the beans. Keep aside till serving time.
For The Beef
Coat the beef fillets with seasoning and some thyme leaves.
Heat a splash of olive oil in a non stick and fry the seasoned beef fillets for a minute each on either side.
Once done, place the fillets on a chopping board and thinly slice.
To serve, place the sliced beef on a plate and spoon the bean salad over it. Serve hot.

2 kg round roast beef
1/2 cup salt (kosher salt preferably)
freshly milled black pepper
1/4 cup onion powder
1/2 cup dried basil
1/2 cup garlic powder
1/2 cup dried oregano

Pre-heat the oven to about 300 degrees F.
Mix together the salt pepper and other dry seasoning in a bowl and keep aside.Cut off the fat from the beef. Arrange the fat trimmings on the baking tray and place the beef round on it.
Coat the beef round with the seasoning mixture and sprinkle with some olive oil.Cook uncovered for about 2 hours. Once done, let the meat rest for about half an hour before serving. To serve carve out neat slices and serve with a salad or some gravy.
